THEORY to VERSE™ spans the breath and depth of our culinary experience and expression,

 and is thoughtfully designed to awaken the senses. and exceed expectations.


 Dishes are inspired by the rich regional culinary and wine-making traditions the  world over, with a focus on fresh, authentic ingredients, herbs and spices, and bold,  vibrant flavors,  Deconstructed and Re-imagined using Food Science like Dehydration, Pickling, Fermenting and Molecular Gastronomy. Each Course is then expertly matched to their Regional Wines. At THEORY to VERSE™ imagination has no limits, and every dish is a creative celebration of our world's diverse culinary canvas.

Poached Bartlett Pear, Sweet Onion, and Fennel Salad with  a Goat Cheese Foam Dressing and Candied Fennel Frawn

South African Style House Pickled Lobster with a Caramelized Spiced Ginger Lime Foam, dusted with Peri-Peri Spices

Sourdough Walnut and Dill Bread with Lemon infused EVOO Olive Oil,  Labne with In-House Pickled Cucumber and Onion, Mint, Lemon Zest and  Garlic, Topped with a Sweet and Spicy House Pickled Cucumber Chip  (dehydrated) and garnished with some Fresh Dill and Mint 

Fourth COURSE ~ CARBONARA ASADA RAVIOLI

Bison Carne Asada stuffed Sourdough Ravioli, in a Queso Blanco  Cheese Sauce with Roasted Red Chile Lime Pepper Brittle (Sugar Glass),  and Cilantro Peas (Spherification)

Fifth COURSE ~ PISCO SOUR ICE CREAM

House Made Ice Cream with Pisco (South American brandy distilled  from fermented grape juice), Lime, Lime Zest, Tarragon, Mint and White  Pepper
